Udon
| This is called noodles with fried tofu. We need a fried tofu, fish paste, some boiled noodles and a little chopped up green onion. First we boil the fried tofu with sugar and soy sauce. Cut the fish paste into thin slices. We make a broth with soy sauce, salt, fish stock, sugar and a sweet kind of Japanese rice wine. Just before serving, reheat noodles quickly by dipping in boiling water and put them in the bowl. Put fish paste, simmered fried tofu and chopped up green onion over the noodles and pour broth over them. When we eat noodles, it's OK to slurp! |
